I think there are lots of ways, but happy to share mine:
Roast in pan:
3 - cloves
2 - allspice berries
8 - black peppercorns
7 - cardamum pods
2 - finger long casia or cinnamon sticks
Cut into thin slices:
One thumb sized piece of fresh ginger.
Crush roasted ingredients loosely in mortar and pestle.
Add all above with about four heaping teaspoons of Assam black tea loose leaf to 1 litre of boiling water. Turn heat to low and simmer for three minutes. Add 1 litre of soy milk (or milk of your choice), bring to boil, simmer again on low for one minute. Pour through strainer into teapot with maple syrup and a few drops of vanilla.
