Fossils are mostly dated by two methods
1) radioactive decay rates in which you look at different elements depending on the time scale. Carbon dating is useless for dinosaurs, but uranium (238 and 235) are useful
2) dinosaurs are often found within rocks. The depth of the rock (and the geology ) helps us understand the age of the fossil.
For example, some dinosaur fossils were found in Norway at a depth of 2256 m below the sea bed.

there would be billions of perfectly preserved drowned skeletons under mud layers that all died at the same time
